Greens: spinach & arugula

Tips: Toast the bagel while you cook the egg. Slice the cheese and let it warm in the skillet as you finish the egg. Throw the greens into one side of the skillet to wilt slightly in the last 30 seconds of cooking. Stack order: greens, then cheese, then egg then bacon, then hit it with a shot of Tabasco, Cackalacky, Valentina or your favorite hot sauce.
